WEST JEFFERSON — Rather than publicize the opening of his new restaurant, owner and chef Jared Yelton has chosen to let his food do the talking for Craft Bistro at 8 E Main Street.
Craft Bistro opened in late March, and Yelton said he’s been pleased with its success. Yelton has been in the restaurant business for 26 years and previously worked as the general manager at Boondocks Brewing Tap Room and Restaurant for seven years.
The restaurant features local prosciutto from A.B. Vannoy Hams, king salmon, ahi tuna, pan-seared scallops and ribeye steak, among other well-crafted dishes. Yelton said Craft Bistro’s wine list is the most extensive in town with bottles ranging from $22 to $97.
Craft Bistro serves lunch from 11 a.m. to 2:30 p.m. and dinner from 5 p.m. to 9 p.m. It also serves Sunday brunch from 11 a.m. to 2 p.m.
